Theodoros was a working Greek name centuries before it was a Christian one: theos and dōron, god and gift, the kind of transparent compound that Greek built by the hundred. Christianity then gave it enormous reach, because dozens of early saints and Byzantine soldiers carried it, and Latin, Russian and German all took their own version. Theo is the piece that survived everyday speech. In the Netherlands and Germany it doubles as the short form of Theobald, a Germanic name from theud (people) and bald (bold) with no relation to the Greek at all.
For most of its life Theo was somebody's nickname. That changed in Europe first: it was registered as a full name in Britain, France and the Low Countries well before American parents took it seriously. The U.S. followed the revival of Theodore, itself lifted out of the Edwardian attic by the same taste that brought back Henry and Arthur. What is genuinely odd is the result. Theodore now ranks #4 and Theo ranks #82, so the formal name and its own diminutive are both national favourites at the same time.
