The mechanics are simple and the etymology underneath them is not. Emery was a genuine medieval English given name, brought over from the Continent after the Conquest as a form of Germanic Emmerich, and Emerson is Emery's son, built the same way as Harrison, Wilson and Jameson. What Emmerich itself meant is less certain. Almost everyone agrees the second element is ric, power or rulership; the first is argued over, with ermen, whole or universal, and amal, labour, both proposed.
