History & meaning
Start with what the Gospel actually says, because the name depends on it. Matthew 2 reports that magoi — wise men, astrologers — came from the East to Jerusalem, followed a star, and presented gold, frankincense and myrrh. It gives no names. It does not even give a number: three is an inference from the three gifts, and the Syriac tradition puts the count at twelve. Everything else is later. The earliest surviving list of the three names in the Latin West is in the sixth-century Excerpta Latina Barbari, where they appear in rougher forms than the ones we know, and by the Middle Ages Caspar, Melchior and Balthasar were fixed, with Melchior cast as the eldest and the bearer of the gold.
The "king of light" etymology arrived with the legend and has the feel of a legend's etymology; it fits Hebrew words well enough to be repeated everywhere, and no early source confirms it. What is solid is the name's spread. Spanish took Melchor, and Spanish took it to the Philippines, where the Epiphany is Tatlong Hari, the Three Kings, and traditionally closes the Christmas season on 6 January. Sets of brothers called Melchor, Gaspar and Baltazar are a real Philippine and Latin American habit, and the Feast of the Three Kings still governs when a good many Melchors have their birthdays.
Why parents choose it
Two syllables ending in a hard consonant, which is unusual in the Spanish-Philippine layer and makes Melchor sit closer to the modern short names than Gregorio or Macario do. It also carries Christmas without being a Christmas name in the way Natividad or Noel are — the association is there for anyone who wants it and invisible to everyone else.

Famous Melchors
Melchor Ocampo, the Mexican liberal reformer killed in 1861, gave his name to the state of Michoacán de Ocampo and wrote the marriage epistle read aloud at Mexican civil weddings for well over a century. In the Philippines the best-known bearer is a woman: Melchora Aquino, called Tandang Sora, who fed and sheltered the Katipunan revolutionaries in her seventies and is remembered as the Mother of the Philippine Revolution.
