The gens Sergia was one of Rome’s old patrician clans — Catiline, the conspirator Cicero destroyed, was Lucius Sergius Catilina. Clan names of that vintage often predate Latin, and Sergius is generally filed under Etruscan borrowings, which means the honest answer to “what does Sergio mean” is that nobody knows. Dictionaries that offer “servant” or “attendant” are reaching for a Latin verb that does not fit.
What carried the name was a saint, not a senator. Sergius was executed as a Christian soldier under Roman rule, and his shrine at Resafa in the Syrian desert became one of the great pilgrimage sites of the late antique East. From there the name spread through Byzantium and into the Slavic world, where Sergius of Radonezh made Sergei a Russian institution. Italy and Spain kept the Latin stem and softened the ending, and Sergio is what came out.
