The etymology is handed to us in the text. In Genesis 29, Leah bears a third son and says that now, at last, her husband will be joined to her; she calls the boy Levi. Hebrew narrative etymologies are often poetic rather than strictly linguistic, but this one is straightforward, and the root lavah, to join or attach, is what nearly every reference gives. His descendants became the Levites, the tribe assigned to the sanctuary rather than to a territory: alone among the twelve they received no allotment of land, on the principle that the priesthood was their inheritance. Moses and Aaron were both Levites.
The name reappears in the Gospels as the tax collector called from his booth, identified in Christian tradition with Matthew. English speakers left it largely alone until the Puritans went shopping in the Hebrew Bible, and it crossed to America with them, where it settled into the frontier vocabulary. A Bavarian immigrant named Levi Strauss then attached it permanently to a pair of riveted work trousers, which is why the name now carries a faint smell of denim and dust. That association did it no harm at all: Levi climbed hard through the 2000s and 2010s and now stands at #12.
